Tried making some homemade bacon

So after seeing another poster post about making bacon I decided to give it a try. Bought a small pork belly at Costco about a week and a half ago and this is the finished product. A slicer would be really nice on this project. Especially on this last piece.

I have a Costco belly in the freezer for that same thing...probably from the same post

Yea it turned out great. The recipe called for soaking it in water for 24 hrs to remove some of the saltiness but I skipped that step. That seemed kind of crazy to use salt and sodium nitrate to pull out the moisture and then to soak it in water after that. Did not taste too salty at all.

Not sure how long this will keep without freezing. Used sodium nitrate and smoked it to 155° so should keep good.

I smoked a 10 lb. pork belly today and it is in the fridge firming up to cut tomorrow morning.

Love making my own bacon.

Looks good. If you put the belly in the freezer and let it firm up it makes slicing much easier. I have an electric slicer and I freeze the bellies over night then put them on the slicer frozen....works great.
You'll never go back to sore bought again.

I have two bellies to go on the smoker this morning. I cold smoke mine for up to 30 hrs.
