This stuff is pretty good if you are lazy and don’t feel like making a marinade at home. They also make a good Pollo Asado marinade. Walmart carries both.

I think you don’t have to marinade choice grade fajita meat overnight, I think most people do it for convenience. 8 hours in the marinade is prime for skirt or flank steak, JMO.

Cook on grill hot and fast, seriously, no more than 5 minutes per side at 500 degrees. If grill is hotter, shorten the time.

If you want to cook in oven, broil on high on a broiler pan set 4-5” below the heat element for 5 minutes per side tops.

I usually let the meat rest for 10 minutes before slicing against the grain.

ETA: I buy the flank steak at Costco to make fajitas, so you should probably grill/ broil that skirt steak about 3 minutes per side.

These instructions are for medium rare to medium doneness. I like a warm red center on any “steak” cut.

Due to this thread I had a hankering for fajitas yesterday. I usually buy my fajita meat already seasoned/marinated from Ideal Market but was short on time. Went to local grocery and skirt was around $12/lb. Ended up buying a sirloin and marinated it in some Allegro Fajita marinade. Turned out great. Skirt steak price was out of control.

Tenderness is all in how you slice it. I hate marinades on skirt steak because it has such great flavor on its own and can be tender if you have a clue as to how to prepare it.
And not overcooking it
