I tried it once and just didn't think it was worth it. Probably for the same reason I don't use sous vide on thinner steaks. They cook fast enough to medium rare that I don't need the same precision as with a monster ribeye or double-cut pork chop.

seems like they would fall apart.....maybe if you use enough breadcrumbs and eggs they will stay together IDK
