1. Membrane on or off - Definitely off
2. Wrap (when/how long) or no wrap
3. Smoke profile Half chimney of bricks to start, snake method with lump and wood, usually apple/cherry or hickory. There is a pile of hickory under my deck, so that's been the usual lately
4. Cooking temp Don't know, I go by bending. Start it up and don't touch the lid for at least 2 hours. After that I check every 45 and spritz it.
5. Finishing procedure bend test

Working at the home office so went to Costco and picked some ribs this morning, 4 1/2 hours at 250 on the Kamado

Put some liquid smoke in your water under the perforated pan. It will give u the smoke. Turn a spoon backwards force it under membrane on a middle rib and pull gently. After you do a couple you'll get the hang of it.

You may find it fun to stand outside tending a smoker when it's just above freezing and raining, but I sure as hell don't. Not to mention keeping the temps stable would be a bitch.
