Thanksgiving Day Leftovers

I know this seems a bit late for this but......

Surely if you had a turkey for Thanksgiving you had leftovers. We did! On Saturday I used my daughter's Instant Pot to make a stock from the turkey carcass. First time using the IP for me and I was surprised how well the stock came out.



Strained of bones and debris.



My plan was to make a Turkey Andouille Gumbo yesterday(Monday)but Sunday evening I started to get things together for the gumbo and decided there wasn't enough turkey left to make the gumbo.

Here's one of the several After Thanksgiving Day sandwiches I enjoyed over the weekend using some of that homemade bread I made last week. It's not exactly a perfectly neat sandwich but it sure is delicious!!!!!



What became of y'all's turkey leftovers???

1.5 quarts of turkey stock and the ultimate post Thanksgiving sandwich or wrap until it was all gone.

Made turkey stock to which I added sliced smoked sausage, leftover turkey, and Carolina gold rice for some freakin amazing turkey bog.

aside from sandwiches we made egg rolls and turkey shepherd's pie, the last of which i ate last night. the turkey leg quarters and carcass are in the freezer for gumbo purposes, at a later date
