Doing ribs and looking for a good SOUTHERN tater salad recipe.TIA.

The number isnt really that big of a deal huh? Just throw in more ingredients if you want more. Potato salad is really IMO one of those things that no matter how good of a cook you are you can still easily eyeball it til it looks good.

To the OP all you need is potatoes(cut up then boiled), eggs(boiled, peeled, and diced), mayo and mustard. A tip that I picked up here a while back is boil the taters in crab boil, it makes a big difference. Add other things to your liking.... green olives, celery, onions, relish, sweet pickles, bacon bits, etc. Thats about as southern as it gets I would think.

i dont like crunch in my tater salad, but my wife will add pickle juice which adds a little flavor without the crunch



also, substituting some sour cream for some of the mayo doesnt make it bad either

Agreed, they do have a variant that I like which is essentially a baked potato made into a potato salad. 50/50 mayo sour cream, no mustard, green onions, chives, butter, bacon bits, maybe a little cheese. Its damn good but not the least bit exemplary of southern potato salad.

Left over bakers or just pre-ccoked, let cool. Dice and fry til brown. Dressing is made of choped bacon, chopped celery, diced onion, mayo with a bit of Bruces Gold or Crystal garlic sauce, bit of Tonys' or SYM. Cover hot potatoes with this mix and serve.

Dang sounds awesome. I do some variations of this for hasbrowns. Never thought of the mayo to kind of give it a sauce. Ill def whip this up next time.

Quick and GOOOOOOD!

Use Small Red Potatoes and enough eggs to make potatos 4/5 of total and eggs 1/5.

Boil lightly in crab boil. Use a good amount of salt. Drain. Allow to cool slightly. Cut potatoes in quarters and eggs in 6ths.

Add to taste:

2/3 Mayo to 1/3 sour cream
Crumbled bacon
Chopped green onion
Celery seed
Salt and Pepper

Best way to mix: use your hands with plastic medical gloves.

Better way, but slow? Smoke your potatoes very slowly over steaming water fired by smoldering Oak wood. When done, use the same ingredients above.

i hate mustard in my potato salad, but then again, im a yankee.

my mom always made a german potato salad with vinegar in it.

Bout to make some for the first time since doing at my grandma's house when i was a teenager. Crab boil is a great idea, thanks!

I crush the yolks up and mix it with the may, mustard and dill pickle juice- like you're making deviled eggs

I'm pro crunchy potato salad. there can't be enough celery, green onion, onion, etc
