Theres a bunch of mexican food trucks on that end of Florida and i always wonder if they are legit. Theres one at cloud and florida, then this one and theres at least 2 more further east on Florida.

Yeah, there's one by the Cortana Mall that I've tried to Google but found nothing.
There's a taco place by Earl's that I haven't seen mentioned here yet, and there's also one on Gardere that looks good.

Those may be real, but I went to a catering show and they had disposable plates that were hard to distinguish from real ones just by looking.

There really isn’t a menu. There is a big banner with photos of the different things you can get. Those are some of the photos. They actually serve on styrofoam plates/cups but they place a lot of emphasis on a grand presentation. If you click on the links in the op you can see many more actual pics.
