Ok. My first ever submission. Mostly because I was already planning to make this watermelon salad. So here goes. I hope I don’t embarrass myself too much!
Watermelon Strawberry Salad with Pickled Red Onion and Fig Balsamic Vinegrette
Yellow meat watermelon. I’d had it in my fridge too long and I had to cut out a lot of the middle. Forgot to take a pic before I cut it.
Here’s most of the ingredients.
Pickled red onion. I’m going to keep some of this in the fridge for all my salads! 1/2 cup balsamic vinegar and 1/2 cup cider vinegar. Poured in over my sliced red onion. Filled up the rest with white vinegar till it was covered. Added red pepper flakes, salt (about a teaspoon) and pepper. Oh, and 2 teaspoons honey made by my son and daughter in law. It’s as local as it gets. His friend lives at the end of my street and has bees!
Salad is about 2 cups watermelon, 1 cup strawberries, 1/2 cup cucumber. Topped it with the pickled red onion, feta cheese, candied jalapeños from Dilorio Farms in Hempstead, and a little basil. It deserves a lot more basil, but it was dark and hard to see in my yard.
Dressing is 1/4 cup extra Virgin olive oil, 1/4 cup balsamic vinegar, and a big tablespoon of fig preserves. Yum!
