I LOVE artichokes. I've tried to love them stuffed and I've had good ones, but I still prefer to have the plain old steamed artichoke. The stuffing just takes over the flavor of the artichoke meat for me. I'll still stuff some large ones which are very meaty, but I always end up pulling the stuffing off and going for the meat.

The recipe Got Blaze posted is how my mother made them and that’s my method too. It is the best!
Whatever you do OP, do not, repeat, do not ever come use panko. Made that mistake once when I was too lazy to go back to the grocery store. Panko is good for a lot of recipes, but definitely not stuffed artichokes! Progresso Italian bread crumbs only.
They are so easy to make and ingredients are not expensive. It’s crazy how much they sell the already stuffed ones for. $10 each at Rouses.

This is basically how my mom did hers. Sometimes she would fine chop boiled egg and place in there and also shrimp.

I too steam mine. The stuffing I make is fairly dry and will clump up if it squeeze it in my hands, but is loose enough to stuff into the leaves of the artichoke.
Steaming will add a bit of moisture to them since I will wrap mine in aluminum foil around the outside to hold their shape and leave the top open so steam does its thing to cook them.
