Stock in the oven

Got a wild hair and put a pot of broth (frozen necks, gizzards, veggie trimmings) on the stove at 8:30 tonight. I probably won’t be up long enough to cook, cool and store it, so I’m going to transfer it to the oven at 200 overnight. We’ve got to be up at 7:00am for a soccer game, so I can turn it off then and let it cool until after the game, then strain. Google says overnight stock is a thing, so I’m going to give it a try. Anybody ever tried it?

Never done it but curious how it will turn out. Seems like a lot of energy to keep the oven on all night. Your kitchen should smell amazingly when you get up on the morning though.

Oh it already does! It’s a 10qt stock pot, so not easily transferred to a crock pot or something more efficient, but I don’t think running the oven for 10-12 hours at 200 is going to be that bad, and I didn’t want a stove top flame all night, and I can guarantee that a 200 degree oven won’t accidentally boil over, and it likely won’t cook out all the liquid since it’s foil covered. I’ll update tomorrow for sure.

Will work fine, but a big ol crock pot would do the trick for a long cook.
