Steak medallions & sneak peek at Porter Road box

Cut up a beautiful sirloin filet and a chuck steak (both from Porter Road) to make some steak medallions/tips in a pan sauce.For the pan sauce I used some leftover herb butter from my roasted chicken and risotto post.
Lastly, I order most of my meat online unless it is something I need in a pinch. Creekstone is my go to for ribs but without a smoker, I just have a freezer full of ribs. A lot of my beef had been coming from Hassell Cattle Company, and I still contend that their Tri-tip is the best I have had. But, when you are feeding a family and usually extra people at work, it gets expensive. I’ve been ordering a good bit from Porter Road as they offer free shipping on anything over $100. A lot of their meat actually ships fresh as well, so not frozen meat and you can sort of plan meals according to your order without the worries of defrosting. Try it if you want, I wish this was a paid advertisement but it isn’t.

You’d be surprised lol. I’ll bring enough for a couple of days and there is always someone with no lunch. Or if I leave it on the stove to come back and pick it up later, the stragglers find out I cooked and it’s gone. Luckily I truly enjoy cooking so I don’t always mind.
One guy did cook some French fries I had in the freezer one time without asking. I went in the kitchen and opened the oven, threw the French fries away and put the pan back in the oven.

Non-meat related: Porter Road sells the world's best spicy pickles. They are the only pickles I will eat. I used to be a major pickle-hater, but their spicy pickles made me a believer. I will sometimes fight the hell that is Nashville rush hour just score some pickles.

Just curious, where do you live that you have to order your meat online?

I know a lot of people that will order meat like 1-2 times a year from a place like snake river farms and I live in Dallas.
I use my local butcher for everything else, but snake river has some wagyu cuts my butcher doesn’t.

I live right outside of Baton Rouge. I don’t “have to” order my meat online, I choose to. The quality is far and away better than commodity beef that you can buy in the normal grocery stores around here. If I can pay $1-$2/lb more and get an American Wagyu chuck roast I can grind or American Wagyu ground beef, or heck even just grass fed grain finished from a place like 44 Farms or Porter Road I will take that everyday over some commodity beef from the grocery store. Especially when it comes to pork, that is a major difference in my mind.

I was just curious. I live outside of Huntsville Al which I don’t consider to be a very big town and American Wagyu is available locally. But if you can buy American Wagyu from an online shop delivered to your house for only $2 lb more than regular beef from say Costco that is a no brainer. I will have to check out Porter Road and their prices.
