Steak in cast iron skillet

Got a lodge cast iron skillet for Father’s Day. Going to do steaks in it on Saturday night. What do I need to know?

Always, always heat the skillet to temperature before putting the meat on.

Get some avocado oil or similar high heat oil.
Season your steaks and put them on a baking rack over a large pan in your oven at 275F for about 40-45 minutes.
Heat the oil in the skillet until you see the oil "dancing" a little.
Sear your steaks on each side about 1 to 1 1/2 minutes.
Top with fresh minced garlic and a generous amount of real butter.
Enjoy.
We will talk about making that skillet better later.

Ghee is better than butter for high temp cooking on the stove. It won't burn.
Although the last cast iron steak I didn't use any butter or ghee and it came out great. Just a few drops of canola oil in the skillet. Got me thinking I might have been using too much butter to the point it was taking a way from the flavor of the steak. A little dab'll do ya.
I am also a believer in letting your steak come to room temperature before cooking.

This. Only thing I’ll add is pull the steaks from the oven when they get to 120F. I usually do the sear on an outdoor burner because of the smoke.

I don’t like to cook a steak from start to finish on a cast iron skillet unless it’s thin
If it’s a thick cut, going to be very hard to cook it evenly(only way I do it when cooking this way is cooking it bleu).

Agreed. But steaks started in the oven and finished/seared in a skillet or started/seared in a skillet and finished in the oven are great.

I start every steak in oven, then finish outside on my cast iron on my fish fry burner

For ribeyes
Pan hot until lightly smokey, add avocado oil
Salt and pepper room temp steaks right before adding to skillet. Adding salt early will pull moisture out. And season the fat on the sides.
Depending on thickness 3:30-4 minutes on first side
Flip, 3 more minutes, add butter and smashed garlic cloves. Baste.
Right before taking out sear the fat on the sides of the steak.
Sit 5 mins.
That's my lazy steak recipe.

This is the way to go for sure. Regardless of the high smoke point oil you use and the ventilation, the searing is going to going to smoke up the kitchen big time.
