Number one remove the bones, they do nothing and don't really add any flavor. They just make the shape odd enough where it is more difficult to get even cooking. Save the bones and cook them longer for some beef ribs. Then I would twine up the roast into a perfect circle.

Salt and pepper and Worcestershire sauce is all I use.

I smoke it around 225-250 until internal temp is around 125. Then sear on all sides for a nice crust. Rest and serve.

I did ours to 133 and took a poll of the room on slicing to sear. Slicing won, and I doubt I ever do one any other way. None of us really enjoy the extreme center of the full roast when only the outside is seared.

I’m doing this for the first time Christmas Day. Lots of great recipes here. My question is, if I find one at a good price, do I need to freeze it?

If it is still in cryovac, then no. If it isn't in cryovac, then maybe. You can freeze it to be on the safe side or just put it in the fridge where you might have to cut off the outside edge. I'm guessing you would be fine with just the fridge, but no guarantee.

I'm doing the Good Eats method. Alton Brown states he had wrapped the roast in cheesecloth and aged it in the fridge for 7 days.

So far, I have done the same, but the Sales at Publix flip every Wednesday, so I had to buy my roast on this past Tuesday. That would be about 12 days in the fridge.

Is it good in the fridge til Christmas Eve? Do I need to wrap it up in plastic wrap and freeze it and thaw it on Saturday?
