Spin-off from pickled okra thread: Giardiniera

Giardiniera. Easy pickled vegetables. The possibilities are endless. Any firm veg can be used. I like cauliflower, celery, red bell peppers, carrots, onions. I add sliced jalapeño or red pepper flakes and garlic . I put whole peppercorns and mustard seeds in jar. Add a teaspoon of Pickle-Crisp. The brine is white vinegar, water, salt and a touch of sugar(optional). The only “rule” is keep the amount of water to the amount of vinegar or less, to your taste. Bring brine to boil for several minutes. Pour over vegetables. Place lid and allow to cool. Shake occasionally to distribute seasonings. Refrigerate. Note this is not canned so it’s not shelf stable and must be refrigerated. It will last a long time under refrigeration.

Why is Chicago Giardiniera packed in oil? It's like olive salad with no olives but peppers instead.

Don’t know. Chicago is strange? Everybody else that I know of has it in vinegar. I’ve had the Chicago style and much prefer the brined. Much better texture IMO

I think most Chicago giardiniera is fermented. After fermentation, they add olive oil. That's what's used for Chicago roast beef sandwiches.

Also absolutely dynamite on pizza with either pepperoni or chopped itailan beef. Keep the tums nearby.
