Specklebelly Goose Recipe
I bagged my first specklebelly goose on Sunday and am looking for a good but low risk oven recipe (I don't want to mess it up). Currently have the whole goose plucked with the skin on brining in salt water. I appreciate any advice!

if you can manage to get a smoker, that is my favorite. smoke it to about 145 degrees and then thinly slice the breast , one of the best wild game meals I have had

Couple of buddies and I go to Kaplan on a specklebelly hunt every couple of years. I always make a dark roux and turn that into a brown gravy and cook them down in there then serve with rice. Always comes out great. The guide we go with swears by specklebelly fajitas but I've never actually tried it.

In an oven proof pot (Dutch oven), heat a few T of oil. Season the bird well with salt, red and black pepper. Brown the bird on all sides over medium heat...10-15 minute process. Add a few links of good sausage and 1.5-2 cups of onion and brown that off.

Drop in a little fresh garlic and one apple, cored and finely diced. Add 2 cups of chicken stock.

Put the lid on and pop in a 300 oven for 3 hours. Taste and season the gravy as needed. Make rice.

Do what Otis said.

I think there’s also a goose and greens recipe in the TD recipe book. Goose and greens or duck & greens. Either one works.

Yep. I posted the greens recipe with duck. Awesome with a speck,too. Just roast it 30-45 minutes longer.
