I do ribeyes at 130... at least an hour at temp. Then I sear either in cast iron or on the gas grill... if you sear on cast iron it is essential to pat them dry first or you just end up boiling them.

Whatever temp your water is that the temp of the steak will be. Go a minimum of 90 minutes up to 3 hours, it wont over cook. When the time is up dip it in an ice bath. For a minute or 2. Save the juices. Seer the steaks in a hot cast iron skillet for 30-45 seconds a side till it charred like you want. Let it rest. While its resting make make a nice peppercorn gravy with the juice.
