So I made some Puerco Pibil last weekend

For those who have never had it or heard of it it's a Mexicn dish from the Yucatan Penninsula that is essentially spiced roasted pork that is cooked in wrapped banana leaves.
I used the recipe below except I was low on salt so I substituted with some soy sauce.

My thoughts on the recipe: good, but it has a flavor is probably less familiar to most palates I'm guessing due to the annato seeds which aren't very common. I'm going to thaw some out this weekend and serve with some cilantro rice and pickled red onions as garnish.
Finally found the pic. Just used my lodge dutch oven as the cooking vessel and lined it with banana leaves. Wasn't completely done pulling it apart at this stage.
