So, any place known for using meat glue I should avoid?

If you've ever eaten sliced ham, turkey, or chicken from your grocers deli, then you've eaten TG.

Meat glue IS safe. You can't use it to stick a bunch of stew meat together and make a filet, though. Stew meat is tough, filet is tender. But you can glue together small trimmings of quality meat and make it into a "steak" that is very tender and tasty.

As said in the video, it is a naturally occurring enzyme.

I bought some of it to experiment with. It's pretty cool, actually.

This is correct.

Did you really think that ham came in square slices and other deli meat came naturally in big rectangular or egg-shaped loaves?

To eat.

If working with it, wear gloves and a respirator. The same free aminos that it binds to in raw meat exist in your nasal passage and on your skin.
