I got some (beeline) red snapper filets on the half shell from a friend recently. Any good ideas?
I've blackened in cast iron before but was hoping to try something different.

put them on the pit. season with salt, pepper, and lemon pepper. cook over medium high coals till the ends curl and that should be a wrap.

Leave on scales, cut score marks into meat. brush with oil and coat generously with Cavendar’s greek seasoning. Grill as you would any fish on half shell. Hit with a squeeze of fresh lemon when it comes off.
Cavendar’s was a tip I learned from a charter Capt. in Cocodrie about 20 years ago. It’s really tasty.
Another good cavendars recipie for grouper or snapper filets is to mix a generous amount with bread crumbs or panko and roll wet filets in it, then pan fry in a mix of butter/olive oil.
