My apologies. A friend of mine got the steel one. Didn't know they made a ceramic version. You got a sweet deal.

Hell no. The guy explained it as because it was a special order and not a stock item, they already lost money on it and he could sell it for whatever he wanted.

You don’t want pics. I way overcooked them because I couldn’t dial the temp in just right.

And I definitely over seasoned them.

Not a bad first run though. I think I figured out exactly how to dial in the temp during the last hour of the smoke or so.

Hey it takes a little while to figure out the air flow from the bottom to the top ands control temp. Best to stabilize it for 30mins or so can then get the ribs on quick and don’t open the top again

That’s good advice. In my case the temp wasn’t right and I should have looked. That was my mistake. Once it’s dialed in I won’t touch it and let it do it’s thing.

I have a kettle, and I use a DigiQ to keep my temps dialed in. It uses more fuel than a Kamado, but also is easier to drop the temps when you overshoot. The kettle with the Slow n Sear is incredibly versatile.

I was contemplating another grill, like a pellet, but I think I'm going to roll with my Performer. Part of working with charcoal is that you have to enjoy the process of setting up your fire. Once I have the coals hot, the Digi Q makes it almost as easy as a pellet grill.

A good meat and pit remote thermometer is a game changer when bbq'n at home. You will learn how to better control your pit and you can track internal temp.

Did it come with a heat deflector of any kind? I’m just wondering if you didn’t cook them over direct heat.
