Smoking Chicken Quarters

Any advices or Suggestions. Some suggest to smoke and then finish on grill and some suggest to smoke at high temperature.

I smoked some with some ribs a few weeks ago. They were on at 225 for about four hours and were amazing.
It was only my second time smoking with my new Masterbuilt. I used some Jack Daniels chips from Sam’s.
Grilling on gas I’ve done many times. Use indirect heat to prevent flare ups on about medium flame for 30-35 minutes.

I usually brine but for quarters I use a butter injection
I go 250 for about 4 hours

They’re good either way. Season as you like and enjoy.

The problem with low temps on chicken is the skin gets rubbery. Prefer a higher temp, about 350. Chicken does not need much smoke like a pork butt.

Yep. If he’s running a smoker, higher temp will crisp the skin...meat’s fine either way.

Smoke in the range of 275-325 and they'll come out great if you have proper thermometers.

I smoke mine for 3hrs at 225. Then sauce them with Sweet Baby Ray. Throw them in the oven at 400 for about 20-30 minutes until the shin gets crispy. Usually do some wings at the same time.
