Ceramic cookers radiate more heat back than metal so they will cook more efficiently and quicker.

Double checked my probe with the thermapen. The probe in the flat was off. Temps were about 10 degrees above normal. Sitting at 182, not 193 as was just shown.

Don't be afraid to pull it off early if it does cook quicker than you expected. It would benefit from a long rest time. Like someone said earlier, you'll know it's done by probe resistance. Should be almost nothing, like warm butter. If it feels like that and it's still a few hours away from serving time, wrap it and put it in a cooler until ready to cut.

Currently smoking a 18# pork shoulder - 6 hrs into cook, temp avg is 125, got a long way to go.

As mentioned earlier, a wrapped in towels fully cooked brisket or pork will easily stay steaming hot 5-6 hours. This method allows you to cook & have ready well before your expected dinner time...looks like you have all the tools for a great cook. Let us know

Sorry for the late response. Came out great. Brisket was really good, but the burnt ends were incredible. Little cubes of meat candy.

Yeah, I drank too much and Was socializing and forgot. The smoked queso was excellent also.
