What's wrong? Your smoker or your rub?

I know. I was on my phone. I figured you'd be able to deduce I was directing that towards you.

poultry seasoning, butt rub, garlic powder, kosher salt, black pepper, braggs 24 herb and spice blend, oregano, and shwarma spice

So let's see here. Poultry seasoning:

sage
thyme
marjoram
rosemary
nutmeg
black pepper

Butt Rub:
no telling how many different ingredients in that

Braggs 24 herb and spice blend:
rosemary*, onion*, garlic*, thyme*, red bell pepper*, carrot*, tomato*, black pepper*, basil*, Bragg Organic Extra Virgin Olive Oil*, parsley*, tarragon*, lemon peel*, orange peel*, Bragg Organic Apple Cider Vinegar*, celery seed*, dill seed*, oregano*, savory*, sage*, ginger*, coriander*, bay leaf*, turmeric*

all of that along with the other seasonings you added .. no wonder the flavor is muddled. Need to pare it back for sure.

I prefer a nice even sprinkle of my favorite seasoning mix, Tony's or Slap Yo Mom, and maybe a little slather of Evoo beforehand. Cook on indirect heat with charcoal and pecan until pull-apart done.

Family friendly. It is just outside of little 5 points so you don't have to deal w that crowd if that's what you're getting at. It's mostly families.

This is what I go with on smoked wings.
Equal parts sugar, garlic powder, onion powder, pepper, smoked paprika, and maybe 1/4 part of salt and cayenne pepper. I like sweet on chicken and the color from the paprika. I'm still working on the temp and wood amount though. I'm finding higher than 325 and longer than an hour is best. But, it's a trade off of tender meat vs crispy skin. Rubbery skin is the worst though so I'm leaning towards high heat.

TJ ribs has the best smoked wings in BR. IMO.
