Smoked whole Flounder, any recipes?

So I have two big whole flounders I had planned on stuffing but way too busy. We are baking one tonight and I am thinking of putting the other on the smoker tomorrow, maybe make some tacos with it.

Any ideas besides the traditional lots of seasoning and butter and lemons?

Never had smoked flounder.

Love it fried or blackened.

I like it simple when it comes to fish. Salt, pepper and butter has never failed me. Sometimes I do some garlic and onion. I am not a fan of lemon on fish.

I did a couple on the grill that turned out good. Kinda did it vietnamese style

Freeze it and cook it later?..... flounder freezes well especially if its whole.
