What a cajun calls gravy and what an Italian calls gravy is way different, absolutely. Although, I have never seen an italian make a gravy, they make a sauce

if im slow cooking a sauce with some meat in it, its a gravy

Yeh thats how I decipher too. I have just heard some old school Italians go at it on the sauce/gravy debate

I havent but it would be fine im sure. To me not much different than a rib or even oxtail, which ive seen in gravy

my grandma always used shoulder or italian sausage because she had a to feed a lot of people

Mine would occasionally add the pig feet. I've never tried doing it myself before, but they added a great gelatinous quality to the gravy I've been wanting to give it a shot, but wary of dealing with them.

Pffft, who do you think your talking to?

I do that that and also add eggplant but not when I use smoked sausage. I find it clashes. JMO.

Never did the spaghetti thing but to brown some sausage & tasso in some tomato sauce, is one of my top 5 all time rice & gravy dishes. Just gotta make sure your brown the tomato sauce with the sausage & tasso, it gives the gravy a beautiful rusty color.
