“Smoked” my first brisket

I’ll say “smoked” because I used my Traeger but IDGAF because it came out delicious.

I also need to use a sharper knife next time and cut my slices thinner, but hey, we all gotta learn.

Salt and pepper seasoned.
Smoked until 165
Wrapped in butcher paper
Cooked until 204
Pulled, rested for a few hours, and sliced.

Fatty on top and lean on bottom in the last pic. The burnt ends of the fatty were incredible. I won’t hesitate next time I see a brisket on sales and I’ll go bigger next time with a prime because of beef.

Nothing wrong with a Traeger. It doesn’t give you “the art” of smoking but the end product tastes good. And I have a stick burner and still say that.

Get you a $22 knife and you’ll be good to go.

What's this?

All kidding aside, when I moved to Texas the Summer of 2020, HEB ran a sale on brisket at $0.99 a pound.

It was $3.99 at HEB this afternoon.

All meat products are high right now. I make my own bacon using pork bellies and they are holding at $3.99 a lb. at Costco and even higher at the local markets.

Whole chickens are holding at $1.25 and up for the past several weeks. Guess it goes hand in hand with the egg pricing for the past couple months.

Agree. I have a couple Dexter Chef's Knives and they are my go-to for the most part. I especially like the nice grip on the white handle.

Same with the 3 oyster knives I have, all Dexter with a very nice grip so my hands don't slip when popping open the shells.

Looks good! A cheap electric knife is good for slicing brisket.
