Smoked/fried turkey

Anybody here tried smoking their turkey before frying it?
How do you think this would effect the fry time?

Not sure why you'd do this...
I use an oiless fryer, frying is strictly by temperature

I think it would affect the skin the most. I've smoked turkey wings & fried them. The skin turns into an inedible leathery mass.
To answer the OP, it would greatly reduce the overall fry time. My best results with the wings were achieved whend they were smoked, chilled overnight, & fried the following day. Hope that helps.

I did a quick fry of smoked chicken for gumbo. I may quick drop some smoked chicken wings for crispy crust. I can't think of a good reason to fry a whole smoked turkey other than for crisp crust. You can get that if you dry it in the fridge before smoking.

I've smoked chicken wings, let cool completely then drop in hot grease to crisp them up, and they came out great. Most of the actual cooking was done on the smoke. So I'd be interested in this. Let us know how it turns out.
