Smoked brisket chili recipe request

I want to put a brisket on a rack above a pot and make chili with it. I’m thinking I put some beef stock, onion, celery, bell pepper and garlic in the pot to smoke and mix with the drippings. Smoke at 215 until brisket is done.

Rest the brisket while I start the chili.

Don’t know what to do from there.

Any tips or suggestions?

I would caution the amount of smoke in the chili you are going to create with this method. Just putting a hunk of chopped up smoked brisket gives the smoke you need to layer in with the various chili dumps.

I would cook the brisket and save the drippings in a foil boat. You can add those to your chili just like any beef stock.

Sounds like a long day to me.

If it were me, I'd save/freeze the flat from the next time I smoked a brisket. Then use it as the meat when you want to make a chili. I absolutely love brisket in a chili. Definitely my favorite meat to use for chili.

This recipe is awesome. You can sub brisket for the chuck.

Brisket drippings are going to be very fatty. I would collect the drippings in a pan. No need to put a pot with all that other stuff in it.

When you start your chili, use some of the drippings when browning any meat / veggies.
