Super simple.

De-case the boudin and shred some pepper jack cheese into a bowl and mix the two with your hands.

Stuff into Cornish hens. Bake 375 for 50m. Brush pepper jelly on outside of hens. Bake 10m more. It should be a deep golden brown.

Edit - I actually took the juices that ran from the chicken and heat it with some pepper jelly to make a gravy.

Billys fan here. Not as big a fan of Ronnies... wish I was since it is way closer. Their boudin is alright. Their sausage is garbage
