Smoked Beef Plate Ribs

Smoking some plate ribs today from the Project Smoke cookbook. Put them on about 30 minutes ago.

This is my issue, cant find true plate ribs anywhere, though I can get chuck ribs at Restaurant Depot, but it just not the same fat content so the done window is really small.

Cooking them on the Kamado Joe. Got the plate ribs from Iverstine Butcher. $10.99/lb. freshly cut while I was there.

Lol,

Just pulled them off. Internal temp of 199. Have them resting in an ice chest over a cup of beef stock for about an hour. Making some smoked root vegetables as a side.

Took about 9hours @ 230-250 plus an hour rest.
