Smoked Beans

Anyone ever smoke white beans? I like to cook my beans low and slow, usually all day in a crock pot. I feel like the smokey flavor from andouille or ham hoc dissipates during the cooking process. Any recommendations appreciated.

I’ve done a batch of white beans on the smoker before. I cooked it similar to red beans with the sausage. I used a small crock and I would suggest to leave it covered most of the cook because it will absorb a whole lot of smoke flavor. That can easily overpower it and make it bitter.

I think I would cook them like normal, and then put in a tinfoil pan and on the smoker for a little while to infuse some smoke flavor.

I've added some chopped pulled pork to white beans after seeing someone post about it on here. It was pretty darn good.

Put your sausage/andouille/tasso in towards the end of the cook, maybe last 30 minutes or so.
I started doing this with my gumbo's and the flavor maintains better.

I would suggest adding your sausage etc... toward the end of the cook, rather than cooking them in the beans the entire time if you think you're losing flavor. I also use some heavily smoked ham hocks in beans.

Are you talking about the beans themselves losing the smoke flavor
Or the meats you’re cooking with losing their flavor
I always do fresh cooked sausage or pork chops on the side
