Do not overcook (it should not flake all the way through the filet).

Soak a cedar plank. Place fish on said plank while fire on grill is getting hot. Season fish. Put a schmear of fresh pesto on fish. Place planked fish on grill. It should be hot enough for the edges of the plank to char.

I receive a shipment of salmon every month and I’ve tried many methods. My favorite is to bake low at 285 for 18min from essentially room temp.

Montreal Seasoning, cover cookie sheet pan with aluminum foil, skin down, 400 degree oven for 18 minutes. Use spatula to go between skin and meat (skin sticks to foil.

One of the easiest and best meals we cook.

How to BBQ right AP (or just a SPG AP type) and a good lick of smoked paprika. Butter in a cast iron on med heat and cook about 3-4 min a side and get a nice crust.
