Simple Mexican chicken recipe for Mexican dishes

Fiugred I'd share this simple recipe. Have used it a few times now.
Can use this in tacos, fajitas, quesadillas, etc. Really simple and actually really good.
4 chicken breasts
Rub:
2 tbs chili powder
2 tbs taco seasoning
I pound out the chicken and then mix and rub the chili powder and taco seasoning into the chicken. Coat it good. Make a little extra rub and use if you like. I usually do.
1/4 olive oil in hot pan. Brown and cook the chicken through, I like getting some crispies on mine on high heat.
Remove chicken, let it sit a few minutes, and then shred.
The liquid:
In the same pan:
add 8 oz can of tomato sauce
2 cups hot water
hot sauce, up to you and your taste. I add a lot. Almost half a medium sized bottle. I want to taste the heat and vinegar.
Bring to boil, and get all the goodies from frying the chicken mixed in.
Lower heat and add shredded chicken and simmer til thickened.
Add salt to taste. Taco seasoning usually isn't enough salt for this recipe. Added salt really brings out the chicken in the dishes.
Make this and you can use it in all sorts of things. Pretty quick and easy and really good.

We do something similar in the crock pot:
3-4 chicken breasts
can of rotel
2 packs of taco seasoning (or to taste as sometimes 2 packs can be a bit salty)
chicken broth/water as needed
crock pot on low all day
shred in the crock pot and eat as chicken tacos

One of my favorite chicken based recipes is a "King Ranch Chicken Casserole". It is easy to fix and tastes great and there are lots of recipes to be found on the net.
