Shrimp etouffee recipes

I know etouffee is like gumbo in that everyone does it a little differently. I am not looking to start arguments, just discussion. what is your goto etouffee recipe. I have tried several and I cant find one that I am just in love with. With crawfish, i prefer a slightly tomatoey with a lot of butter sauce but that just doesnt translate well with shrimp IMO.

2 sticks butter
1 onion
2 toes garlic
Squirt tomato paste
1/4 cups flour
1 1/2 pounds seasoned shrimp green onions
Little parsley
Cracked black pepper to taste
Salt to taste


Melt butter, saute onions till clear, add garlic, cook till aromatic, add some high quality tomato paste to make it red, let it cook 3-4 minutes add your flour, cook 3-4 minutes, add your shrimp and green onions cook till shrimp are pink, finish off with parsley, pepper and salt.

I always season my protein before I add it to the pot. If I'm making an etouffee I'll season my shrimp with some Paul Prudhommes seagood magic or creole seasoning first. Then cook it.

I make a blonde roux with about 2/3 to 1/3 butter to oil.

Add finely chopped trinity and garlic. Shrimp or seafood stock with a little tomato sauce.

Let low simmer for 30 mins. Add shrimp chopped in small enough pieces that you can get maybe 2 on a spoonful.

Garnish with finely chopped green onions.
