"Sell by" dates on meat

I bought a boneless pork shoulder from Rouses on Monday to make some jambalaya on Friday. Went to go cube up the meat on Thursday so I would have less work to do on Friday and the meat had a layer of slime on it. The "sell by" date was the 8th (Friday) on the package. I had to throw the whole damn thing away!
If a package of meat has a "sell by" date on it...when would the "cook by" date be? Mine had gone bad even before the "sell by" date had been reached. How do they determine these dates?

It shouldn't have gone bad before sell by date, but sounds like it did. I don't use any meat after sell by date.

Was the meat discolored? What temp was your fridge set on? Did it smell?

All this depends on the temp the store keeps it at and then when you take it home, what temp you store it at.

Yes, on the discolored. Temp is 4/5 (coldest) which I dunno the actual degree. I couldn't tell if it smelled as I am congested.

Your fridge should be around 36 degrees. If it is over 40 then it will not hold meat well.
Once a month you should touch the back wall of your freezer and feel for a large build-up of ice.
This is a sign of a defrost issue, and also the leading cause of fridges not maintaining proper temperature. (Unless its a SubZero, Thermidor or Viking, then you have a dual compressor system)

I had a similar experience with spare ribs from Walmart. I checked the sell by date and it was still 3 days away. As soon as I put it in the car and closed the door the smell came at me through the plastic.
Now, I check the date, look at the color and smell it. If it's really gone bad you can smell it through the plastic.

I always watch the sale by date on pork. I've gotten it from the store with a few days left on sale date and had the same issues. I never buy pork ahead of time. If I have to buy it ahead of time I just freeze it.
