There's an active thread about re-using crawfish water that is loaded with salt and will be boiled for an extended amount of time, and this is where you're at??
Or do you mean you froze it on 2/19 and just defrosted it today? It should have stunk up your entire kitchen by now if it was just refrigerated.

Fatty pork goes rancid after too long in the freezer. Three years on I wouldn't use it.

Yes there is. I write safety programs including sell by and freeze by dates for meat processors. The date is a day, not a year. Sell by 2/20 means February 20.

Most meat I buy has mm/dd/yyyy or mm/dd/yy format for the sell by date? Up to the OP to clarify what he meant.

Sell by date is not a use by date. It it’s sell by 4/20, you have a couple of extra days after that to eat it.

Don’t apologize, you have us entertainment! Your sausage should be fine as you have a couple of days past the sell by date to use it. Do the smell test.
