Ok I get the curing salt, that makes no sense given it’s already cooked.

But poblanos Taste better than bell and I’ve seen lots of recipes that call for chili powder and jalapeños.

Who in the hell puts bell peppers in boudin? Maybe in Tejas? I’ll stand by my comments

Are you serious? I’ve never heard of a boudin recipe that didn’t call for the trinity.

no bell peppers in the recipe i use.

season more on the front end and just get the taste right when mixing everything to go in the casing
