If a recipe calls for 5lbs of seasoning blend, whats the breakdown in amount of trinity?

I cooked a pastalaya this weekend using 3lb pasta and 5lbs of seasoning blend (used 5 1lb bags).

I don't like the way its gets really watered down, and I know fresh veggies are always better.

I plan to double that recipe soon for a graduation party and was wondering what would the breakdown be.

I see an equalivent tab on the calculator, just not for seasonings blend.

or I guess I could use the same amount of vegetables on the calculator as if I were making a 10 gal jambalaya?

Use more than you think you need. Extra onions will only improve your pastalaya.

Why not just weigh out 5lbs of onions and peppers?

the seasoning blend bags obviously have way more onion than red/green peppers and celery to total 5lbs.

I was just curious about the ratio. Not rocket science I understand, just asking the F&D opinion

For 5 pounds of seasoning blend, I’d use 5 pounds onion, 4 bell pepper, 1 stalk celery (the whole bunch, which is properly called the stalk, not 1 rib). Add garlic and parsley if you’d like.

I say 5 pounds of onion because after you cut them and peel them, they won’t be 5 pounds.

But the easiest way to answer your question is to go by pot size or pounds of rice. If your pot is 10 gallons, I use 10 pounds onions, 8 bell peppers, and 2 celery.

Who are you getting a recipe from that calls for “lbs of seasoning blend?”

Cook the liquid out of your vegs. It takes a while but worth it.
