Sea Bass recipe.

Lookin to cook some sea bass.
Going to throw in in a med-hi skillet with olive oil for 2 minutes, turn and place in 350 degree oven for 10-13 minutes. What herbs and seasoning should I add before cooking it?

I grilled some sea bass last night actually. Just a little oil, salt, and pepper on the fish. Then I put the following ingredients in my food processor and made an Italian salsa verde to go on top once the fish was done:
1 cup flat leaf parsley (lightly packed)
2 T chives
1 T capers
1 T honey
1 anchovy filet
2 garlic cloves
Juice from half lemon
1 T water
Process it a bit then slowly add a couple tablespoons of olive oil and keep processing as you go.
It was a recipe out of a Bobby Flay book, came out very well.

The chef at the restaurant I bartend has a go to recipe that is money.
Prepare the fish as you suggested by pan-frying then finishing in the oven-but coat the fish with candied shaved almonds. The sweetness of the almonds will seep into the mild fish and by finishing it in the oven-you won't burn it.
While finishing it in the oven, saute some lg count shrimp (10-12 count) with some lemon zest, white wine, and butter (a scampi-like sauce). Top the fish with the mixture and enjoy.

I made this recipe several months ago and it was amazing. Only thing I did differently is that I baked the bass on a cedar plank.
