The chef at the restaurant I bartend has a go to recipe that is money.
Prepare the fish as you suggested by pan-frying then finishing in the oven-but coat the fish with candied shaved almonds. The sweetness of the almonds will seep into the mild fish and by finishing it in the oven-you won't burn...
