The chef at the restaurant I bartend has a go to recipe that is money.
Prepare the fish as you suggested by pan-frying then finishing in the oven-but coat the fish with candied shaved almonds. The sweetness of the almonds will seep into the mild fish and by finishing it in the oven-you won't burn it.
While finishing it in the oven, saute some lg count shrimp (10-12 count) with some lemon zest, white wine, and butter (a scampi-like sauce). Top the fish with the mixture and enjoy.

Ole Miss is gonna stomp the Green Wave, who will end this game with an average of negative rushing yards per game (sacks count towards stat for what it's worth).
