Scotch Whisky Tours- seeking recommendations

My wife and I are planning a trip to Scotland and want to tour some distilleries in the different regions (Islay, highlands, Speyside, lowlands, etc).
Have any of you done this and would make a recommendation for the path you chose?
Rent a car?
Hire a tour company?
I know this seems like a travel board question, but I suspect there are scotch drinkers here that can help.

I did a tour of 3-4 distilleries in one day back in 2005. By the 3rd one I was feeling good and ready to buy. Bought two bottles of 1964 Glenlivet at their Distillery in Moray, Scotland. They were bottled in 2004, 40 year old.
It was the famous whiskey trail in Speyside region of Scotland, where most of the single malt from comes from. I think we stopped at Macallan and Chivas Regal

Where are you staying? Islay is on the other side of the country from Edenborough

No decisions have been made about any stays or sightseeing.
We're going to be on the Isle of Man for the TT races the week before and fly into Edinburgh to start a week of touring. The only things we've discussed are distillery tours, seeing the ruins of St. Andrews Cathedral, castles, and perhaps some fly fishing.
Open to any suggestions.
