Your initial post in the thread was an indepth description of the subtleties in the flavor of gumbo. Broadcast to everyone . Why would you do that except to astound and educate the masses. Don't be disingenuous

I did this exact thing to my very own homemade shrimp gumbo last night. Crystal doesn't add much heat, but the bit of vinegar taste was just the ticket. I don't cook hot sauce in gumbo. I like it added to the bowl.

My goodness this thread went South fast. Almost makes me happy that I have more to worry about than whether I might be offended by someone adding a condiment to my food.

But I'll agree he's taking it a bit far. The position about restaurants providing condiments is a little absurd. Think about the restaurants at which you dine. Applebee's, Outback, whatever chain it might be, they provide condiments precisely because they cater to all palates and thus cook not to offend instead of cooking to please. Nicer restaurants don't provide those same things because the food is supposed to speak for itself. I think that's fair.

Likewise when I cook at home, I have to cook for my significant other's palate as well as my own. That means I frequently will add some hot sauce if that's what it takes to satisfy my preferences. Similarly, I wouldn't be offended if someone did the same, assuming they tasted first.

Adding salt pisses me off, but it's their food. I've had people add salt to the chips at Mexican restaurant, and that's rude as frick!

Even if I taste something, I have the preconceived notion that I will add hot sauce to gumbo, RB&R, etc. I just like a nice dash of it.

It is not rude per se but as a few others have said a well prepared gumbo doesn't need hot sauce in it at all. Adding hot sauce into the mix adds another flavor profile that gumbo can thrive without at all.

I'm not sure what you wrote here, but I like the other flavor profile a little vinegary hot sauce provides to gumbo. I don't use it all the time and I agree that it doesn't "need" it, but sometimes, I want it so I eat it that way because I like it.

It's not rude, period. The cook might not like what another person adds to his or her dish and people who add without tasting might not have the most discerning palates or care as much about layers of flavor etc... as those of us who cook a lot do, but it's not rude. Not everyone is into the taste of food as others are. They wolf things down and salt before tasting and that's fine...for them. Just the way it is. Too get angry about it is just silly.

I've never been able to get salt to stick to the chips in a bowl. You have to warm them at home in the oven to get a little salt to stick to them.

So you're saying a restaurant with condiments on the table isn't making good food? I think that opinion sucks.

As for gumbo, drop a spoonful of big couv's homemade chow chow in a bowl of gumbo and you want wanna eat gumbo without it again. Oh I forgot to say flavor profile!
