Roast beef for sandwichs in slow cooker

Have a 2.75 lb bottom round roast. Have tried the recipes done with a jar of Italian pepper, not crazy about it. Need other suggestions please.

I use this recipe. Use the full amount of spices called for even though the recipe is for a 5 lb roast.
