I destroyed some Palmetto jalapeño pimento cheese with a box of those last summer.

We had them sometimes as well. I still like a good casserole especially with a creamy inside and a crunchy buttery topping. One of may favorites is chicken and cornbread casserole. Cornbread isn't quite as crunchy as a Ritz cracker topping, but it's so good and comforting.

You're right, though, these days many of them are side casseroles.
