Have a question about the instructions, 1 16 ounce container calls for "2 cups of cooked rice"
My question, and this may seem ignorant so I apologize:
Do they mean 2 cups of raw rice, cooked
or
2 cups of cooked rice? Meaning like 3/4 cup of raw rice?

What Kajungee said. I add more than that. Three cups(1.5 cups raw) of cooked rice actually, and I find that to be a good ratio.
I finish it off with a dust of ground sage, and some green onion tops. The sage makes it taste like the dirty rice at Popeyes and Curch's(which I like).

I use Richards sometimes too. When I do I'll brown down about a 1/2lb of ground beef and season it with a little salt, garlic powder and a touch of rubbed sage. Drain it and add the Richards. Simmer for 20 minutes. I make a cup and a half of rice on the side then add about 3/4 of that to the mixture and stir, looking for the ratio of meat to rice that I want. Most times, I have rice left over.
Another fun option is to add about 1/2lb of Rouse's loose green onion sausage (instead of ground meat). Just back off on your seasonings if you go this route.
