I’m pretty new to smoking.

I have two large racks of spare ribs on the electric smoker. They are the biggest racks I’ve ever tried. They’ve been on since noon, but the temp has only gotten back up to just under 200F and it’s holding there. Internal temp is 143F.

Is this going to pose a problem for 3-2-1, or do I just keep plugging forward and make sure the internal temp hits 190F-200F in the last hour?

Do I need to prepare to fire up the oven or grill just in case?

add some fuel?
200 wont even get the water in the tissue going

Yeah, you gotta get that temp up. 225-250. You just aren't going to get there <200

I guess I can finish in the oven or on the grill and get those temps up.

What kind of electric do you have? I have a masterbuilt and I smoke on 225-250 all the time with no issues. Have even done some things at 275.

Masterbuilt. Never had a problem getting it to 225F before.

Ended up cutting them in 1/2 for the 2 hour foil and braised them with dark beer, left them in foil and put them on the grill and got internal temp up to 205F, removed foil and brought back to 205F on the grill and removed.

We’ll see...
