Reverse seat without meat thermometer?

Stuck in condo in Colorado. Have two nice ribeyes. About 1.5 inches each
Guessing about 45 mins at 250

Go by touch. Thumb to pinky is well done, thumb to index med rare

ETA: truly it’s how fast the meat bounces to its original shape after poking it. The faster it retracts to original form after the poking the more done it is. I would say go for 2.5 seconds but that’s a guess. I haven’t ever timed it

This is for searing first, but you can just flip the process.

I had a meat thermometer fail on me in a crucial moment. Googled medium for steak on reverse sear at 275. 20 minutes.

Sear it after that.
