Thawed too much out on Friday and was curious if there is any issue with refreezing gumbo. I get mixed opinions when I google it.

Don't do it, the first freezing will have broken down cell walls and membranes of the solids of the gumbo meats or veggies. Refreezing will not make a pretty picture at all.

It will be safe to eat, but it will make your chicken, seafood, or whatever you have in there a mess.

It may change the quality such that it's not as good, but it won't make you ill.
