2 pages and only 1 mention of fried snapper.
I've never seen or heard of fried snapper, except once and it was on a fish taco.
Snapper is awesome on a hot grill with a little butter, lemon and either some light salt and pepper or a heavy blackening seasoning.
IMO, its not a fish you deep fry. Pan fry would likely be much better.

Good snapper (or any fish for that matter) needs very little work.
Pan sauté in butter or olive oil with lemon, white wine, salt / pepper and any small amount of herb/garlic/onion you like.
Butter, garlic, parsley, white wine, salt and pepper would be an easy and classic preparation.

Based with melted butter and season with Lemon Pepper. Bake on a raised rack at 450 for about 20 minutes. Maybe put some butter sauteed crab meat on top.

I just blackened it. Ran through butter, heavy seasoning on both sides then in a hot pan with butter an olive oil. Amazing !
