Red gravy vinegar based chicken sauce piquante

Want to cook something with a vinegar twang to it. Any sugesstions. Like a creole dish type

Season and Brown a hen in lard or Wesson vegetable oil, or if you have enough chicken fat to harvest off the hen.. in a big Magnalite pot and add 3/4 lb of diced tasso, a chopped onion and bellpepper and brown the veggies and tasso down. Add a teaspoon of tomato paste and mushrooms if you like, and add chicken broth til the liquid is half way up the side of the pot. Let the hen and tasso cook and when the chicken starts to get tender, add a pound of smoked pork sausage and simmer for 30-45 minutes. Before serving, top with finely chopped parsley. Serve over cooked rice with your choice of a combination of greens, black eye or purple hull peas, potato salad and cornbread.
You can douse your individual plates with pepper vinegar sauce for additional heat.

Damn near word for word the way I cook it!
If you’re feeling adventurous, slice lemon thin and add in. It will add a good acidity and the lemon rinds taste great in the gravy.
